Awesome Apple Pie Bundt Cake

I copied this recipe onto a piece of college-ruled notebook paper at a potluck many years ago. Whenever I have a few Granny Smith or Pippin apples left after making a pie, I leaf through my collection in search of this recipe. I renamed it, because the original title – Apple Cake – just doesn’t do it justice.

 

4 green apples

3 tablespoons cinnamon

½ cup sugar

 

Peel and slice the apples. Combine cinnamon and sugar, Sprinkle over apples and mix well. Let stand.

 

3 cups all purpose flour

1 tablespoon baking powder

½ teaspoon salt

1-2/3 cups sugar

 

Mix dry ingredients.

 

1 cup canola oil

4 eggs, beaten

½ cup orange juice

1 tablespoon vanilla extract

 

Mix wet ingredients. Combine with dry ingredients. Stir until blended.

 

Grease and flour a bundt pan. Spoon in half of the batter. Top with half of the apples. Repeat. Bake at 350° for 1-1/2 hours. 16 slices.
